- 4 cups packed kale, chopped
- 1/2 cup walnuts
- 1/2 cup parmesan cheese
- 2 garlic cloves
- 1 bunch of basil
- 1/2-2/3 cups extra-virgin olive oil
- A pinch of sea salt and ground pepper
In a medium saucepan, bring water to a boil. Add kale and cook for one minute. Drain and rinse with cold water. With your hands, squeeze out excess water.
Meanwhile, lightly toast walnuts in a small pan over medium heat for about three minutes.
In a food processor, combine kale, walnuts, parmesan, garlic, and basil. Season with salt and pepper. Process until nuts are finely chopped. With machine running, pour in oil and process until smooth. Add more oil if necessary to achieve a smooth consistency.
Add to pasta, potatoes, omelets, pizza, etc.
Serve and enjoy!
